Yesterday I spent an hour at this restaurant for a cup of coffee and some quick snacks. As always I thought of trying something new. The name appeared interesting to me and I ordered a portion of Herb crusted pan grilled chicken on skewers. The delicacy was served with nice and tempting garnish and it was an extreme pleasure of my taste buds when I took the first bite of the chicken. Tender meat with a grained surface and a mild but distinguished flavor that I would remember for long.
Let’s take a closer look at the delicacy. In professional cookery, ‘supreme’ is a specific way of cutting the meat (French: suprême de volaille). Supreme cut of chicken is actually a boneless, skinless breast of chicken. Basil pesto is a traditional Italian sauce made of basil, pine nuts, Parmesan, garlic, and olive oil. This dish is cooked by marinating chicken supreme with basil pesto, a little harissa (hot sauce used in North African cuisine, made from chili peppers, paprika, and olive oil) and chili; put into skewers and wrapped with a little crumb and then pan grilling. In one portion, six skewers are served with harissa mayo. The combination makes a class of its own.
